Brazilian barbecue, also known as "Churrasco", is derived from a traditional cooking style in southern Brazil, with origins dating back centuries. It is said that Portuguese colonists brought European barbecue techniques to Brazil in the early 16th century. The Cavusho are nomadic indigenous people who lived many years ago in the southern steppes of Brazil. They grazed their cattle all their lives, and they ate roast meat. They salted the beef, skewered it on a wooden pestle, and cooked it gently. This was the first Brazilian barbecue. Until the end of the 18th century, Brazilian cowboys often used their free time to skewer meat with long swords and barbecue it over an open fire. Over time, this cooking style gradually blended the culinary traditions of Portuguese, Indian and African slaves to form a unique Brazilian barbecue culture.
In Brazilian culture, grilled meat is not only a way of cooking, but also a symbol of lifestyle and social activities. An indispensable food for local parties and celebrations. Brazilians love barbecue and consider it one of the best ways to get together with family and friends. Every festival, celebration or family gathering, barbecue is almost always one of the must-have food. As a result, churroir occupies an important place in Brazilian society and is regarded as a cultural symbol, representing the happy mood of people to get together and enjoy life.
Brazilians eat barbecue like the original taste of meat, because different parts have different tastes, so only salt is used to season the meat. Meat skewers, roast over fire, sprinkle with kosher salt, let the salt melt and penetrate, when the meat is cooked, pat off the salt, and then use a sharp knife to cut the surface for eating. The Brazilis show attention to the original flavor of the meat, in the fresh and rough taste there is a pine fragrance, this is full of original taste.
In Brazilian restaurants and on the streets, it is not uncommon to see chefs in traditional dress holding long skewers next to huge ovens. Its essence lies in the way of "grilled on the spot, choose your own food".
