American Barbecue Master

American barbecue is famous in the world. 83-year-old American female barbecue master Tomenez is the best in this field. Her barbecue makes many people get up at 4am to queue up, and they have nothing to eat if they come late.

Norma Frances Tomenez is a semifinalist for the 2018 James Beard Award for Best Chef in the Southwest.

Robert TOMenez: "It's very hard work. It's a hard, dirty job. You can dress up and put on makeup, but how long will that last? If you want to look good, don't be in the barbecue business. There are very few American barbecue masters who are women, and very few who are 83 years old like me. Some of them are close to my age."

Kerry Bexley, owner of the Snow Grill, said: "It's nothing to her, it's just business as usual."

Tomanez: "I'm Norma Frances Tomanez, barbecue master at Snow's Grill in Lexington, Texas. You can call me Douce. I got up at 1:15 a.m. this morning, cleaned up and then drove nearly 30 kilometers to get here at 2 a.m. every Saturday. We begin to heat the bbq oven, turn the roast, wipe the roast, or move the roast. We need everything ready by 8:00 a.m. This stove is for chicken, and this stove here is for pork chops, which I've turned over and wiped down. The first one on the right is the ribs, and the big stove on the left is the brisket."

Have customer feedback: "I got here at 5:11 a.m. After you eat this barbecue, you'll never be a vegetarian again. This barbecue place makes the world peaceful, it's that good."

Tomenez: "I can tell when the roast is ready because I can tell how tender it is. "

Customer : "We got here at 6:45 a.m., and because of Douce's reputation, you know she's really good. I want her barbecue. That's why I'm here. We'll buy everything. And what I really want is a roast brisket, which we've heard a lot of people say is great, but pork chops, chili sausage, smoked chicken, I want them all. We'll have barbecue all over the table."

"Everything is cleaned and ready for next Saturday," TOManez said. Now I can rest until I'm ready to go home. A lot of people my age just want to sit in a rocking chair and relax, and I'm still making barbecues. I pray to God to give me good health and a clear mind so that I can make barbecue for a long time."
